Been following MyHeartBeets.com since probably the month it first went online. Also got this book the first day it came out and immediately made murgh makhani (butter chicken). While my plating isn't nearly as nice :) - the flavor was incredible. When the instant pot was doing it's quick release, my fiance stopped and said "Oh my God.... that smells exquisite."While the digital blog format is nice because recipe search is easier, there's something nice about having a book next to you while you cook. The book's recipes aren't found in the blog, and the few ones that are, are slightly modified and provide extra feedback about why the ingredient is necessary.For example - not going to lie, I was going to try to make butter chicken without the kasoori methi... Then of course Ashley has a footnote in the book, along the lines of, "I know it's just a pinch of kasoori methi, but make sure you get it because it's what gives butter chicken it's flavor."Ashley read my mind.I went to the grocery store 15 minutes away and it was totally. worth. it. This has been the best $22 I've spent. Recipes are delicious and unique, and the book is nice to hold and have next to you as you cook away. Seriously this is the first cookbook I've bought and it is nice to not have to run from your computer (away from the splash zone) back to the kitchen.Anyway - if you're still reading this - get the book!And Ashley - Thank you so much - Love this book!

I have been following Ashley's blog for a couple of years when I started eating more Paleo. Her blog has so many creative dishes and the recipes are always perfect. She really takes her food seriously. I love flavorful food and when I made Paleo recipes from other sites, the food was always a little bland to me. Literally everything I make from her blog is restaurant quality, So when I learned that Ashley had a new cookbook, I bought it without hesitation. A couple of hours later, I realized it was designed for electric pressure cookers. So I bought an Instant Pot. Because that's how much I love Ashley's recipes. I just received the Instant Pot and her cookbook today and I immediately made the butter chicken. I had everything I needed to make the dish in my kitchen. And side note, once you make an initial investment in some core spices, you can make every one of her recipes. In fact, even when I make a non-Ashley recipe, I never need to buy any additional spices. I have everything I need to make all kinds of recipes, from Thai to Indian. Anyway, back to the butter chicken, it was so delicious! Seriously, better than any Indian restaurant I've been to previously. If you have an electric pressure cooker and you love flavorful Indian food, you will not be disappointed. I can't wait to try her other recipes.

I credit Ashley, the creator of the blog My Heart Beets, and author of this book for getting me started with Indian cooking and falling in love with it.There is a LOT of cooking content online, if you've ever looked at Pinterest, for example. Some of it is good, some of it is great but I find that the majority is either just "OK" or not that good. After trying out a few of the recipes on that blog, I found that they were ALL great and easy to make and I came to trust it as a reliable source, which is important to me, so I don't have to waste time and ingredients making mediocre dishes. Ashley is one of the rare people who have great taste AND can write a recipe in such a clear manner that it is very difficult to mess it up if you pay attention to the directions.I have cooked recipes from this book for other people and they are always delighted with the results. I work with a lot of people from India and they are typically impressed the food I make. For example, a colleague from Kerala always talks about how authentic the Beef Fry recipe smells when I bring it in for lunch.I don't want to sound too hyperbolic but if you are interested in getting into Indian cooking, this book (and her blog) can change your life. Before discovering that blog and this book, I cooked food that was basically utilitarian. It was decent but just something to eat. Now, I eat food every day that is better than my local Indian restaurant and it doesn't even take that long to make...for example, with an hour and $10 (or less) worth of ingredients, I can have 3-4 delicious lunches that would easily cost $30-$40 at a restaurant. I am so grateful for this!

I had the honor and pleasure of testing some of the recipes before the book was published. Every one was hit! I have two favorites so far: Sweet Saffron Fruit and Nut Rice (Meethe Chawal) and Yellow Lentils with Spinach (Palak Moong Dal). The rice dessert smells like Christmas and tastes like love. The lentils are so comforting and filling. I just got an eggplant in my weekly veggie box, so the mashed spiced eggplant as well as the pork vindaloo will be on today's menu. These recipes are easy and quick and delicious.Ashley’s recipes have become staples in my kitchen. I love how simple, flavorful, and crowd-pleasing they are. I don’t have to go hunting for odd ingredients; her recipes use ingredients I generally keep on-hand in my pantry. I’ve made her recipes for family with plain, non-adventurous tastes and opened up a whole new world of gastronomical delight for them. And no one can tell that the food is gluten- and dairy-free! The flavors also excite my taste buds (Indian is my comfort food). The recipes are easy to make and don’t take a lot of time, but with the flavors that come out of the pot, one would think I’d labored all day over the meal. Thank you, Ashley!EDIT: Although I had an e-copy, I had to buy a hard copy, because I use it so much and like having the hard copy in the kitchen and to flip through as I'm menu planning. LOVE LOVE LOVE this book!
